This is a reality I have been dealing with for several years. It is not a recent thing, and most of my optimizing centers around phrases, with single keywords as a secondary priority. I see every day visitors using 4 to 8 word phrases to bring up results in search. The really neat thing about concentrating on multi-word phrases is that sometimes a website will rank higher for the desired single keyword than it did before optimizing for several phrases. Another important fact is that just having these phrases included in meta tags is not enough. They also must appear in the content within the pages of the website to be highly effective. Here is a tip: Follow your weblogs and site tracking to see what multi-word phrases are finding your site, then create 4 or 5 other phrases that do the same thing, and optimize those phrases. Over time using this method can really increase your site traffic, and it is highly targeted.
